Boiled Fair. Riso Nano Vialone Veronese IGP rice stars in gold medal dishes.

The long-awaited Boiled Meat Fair in Isola della Scala has begun, amidst show-cooking, tastings and events of all kinds. Among these, we would like to point out the Gastronomic Competition XIII City of Rice Trophy, whose prize-giving ceremony took place in the Taste of Earth Restaurant.

Eight institutes took part in the competition with their specialities. Main ingredient? Precisely the Riso Nano Vialone Veronese IGP, the symbol of these lands and an inevitable first course of the local tradition.

The jury was composed of President Fabio Tacchella, Antonio Gioco, Renato Leoni – President of the Consortium for the Protection of IGP Riso Nano Vialone Veronese – Nicola Andreetto of DecorFood Italy and Sandra Murari of the Veronese Butchers’ Association.

The winner of the competition was Istituto Ipssar San Pellegrino Terme with the following dishes: Risotto mantecato alle erbe, crema al fieno e monte veronese stagionato e cannolicchi; and Petto di faraona cotto in foglie di vite, crema di riso ai funghi porcini, porro al cartoccio e profumo di lievito.

The Consortium for the Protection of PGI Riso Nano Vialone Veronese gave all the schools as much rice as their dishes scored. In this way, the students will be able to experiment and create new dishes.

This is also one of the objectives of European excellence: to enhance tradition, promote innovation in the kitchen and bring safe and certified goodness to the table, starting from the habits of the youngest.
