Asiago Green Edge. The integrated sustainable supply chain project of Asiago PDO is travelling alongside Europe.

Sustainability is a value that the PDO and PGI brands have always cultivated and that will never stop growing. This was demonstrated by the Asiago Cheese Protection Consortium which in September 2023 announced the Asiago Green Edge project. A strategy that opens the door to the future of the PDO with an integrated path of sustainable innovation, based on a plan of continuous improvement that involves the entire production chain of one of the most beloved and exported European cheeses.

Starting from the analysis of the Product Environmental Footprint (PEF) life cycle developed by the European Union, the project Asiago Green Egde – Asiago PDO Sustainable Supply Chain – has innovated the approach to the environmental theme at the pace of European strategies. The course reaffirms the role of the Consortium of Protection as a guarantor of quality and sustainability through a new policy of territorial governance shared by all the protagonists of the supply chain, composed of over 34 producers, 6 seasoners and about 1000 breeders.

The key words: animal welfare, low impact technologies, emission reduction, heat recovery for washing water, elimination of plastic and diffusion of speaking labels.

A path that, therefore, sets new standards of transparency and sustainability, involving the food industry, called to become the pioneer of a new lifestyle and responsible consumption.
