Veneto Olive Oil PDO Biscuits


Ingredients for 4 people

200 g 00 flour

90 g sugar

1 egg

90 g of Veneto PDO oil

1 vanilla pod

Lemon peel

1/2 sachet of instant baking powder

Salt to taste

Icing sugar

In a bowl, beat the egg with the caster sugar until it becomes thick. Add the oil, vanilla and grated lemon zest, continuing to beat with the whisk. Now, add the powders: sifted flour and baking powder. Stir the mixture with a spatula, trying to mix from the bottom upwards. Add a pinch of salt. When the mixture is smooth and homogeneous, wrap it in cling film and let it rest in the fridge for at least half an hour. Line the baking tray with baking paper. In the meantime, roll out the dough on a floured pastry board and cut out equal shapes with a pastry cutter, which you place evenly on the baking paper. Bake the biscuits at 180° in a preheated oven for 15-20 minutes. They will be ready when the surface is nicely browned. After taking them out of the oven and letting them cool, sprinkle the Veneto oil biscuits PDO with a sprinkling of icing sugar.
