- 2 yolks

- 150 ml milk

- 150 gr of Asiago PDO Fresh

- 60 gr of Asiago PDO Aged

- Butter

- Salt and pepper to taste.

Preparation

Prepare the necessities for a bain-marie cooking: a bowl, saucepan, whisk, and a nonstick pan. Pour the milk into the bowl. Add the Asiago PDO Fresh and Aged cheese cut into small pieces and then let them sit in the refrigerator for 2 hours so that the cheeses soften in the milk.
After the waiting time is over, transfer the mixture to a nonstick saucepan.
Begin the bain-marie cooking: bring the water to a boil in a saucepan while you heat the milk and cheese mixture on top, being very careful that the bottom of the nonstick pan is never in contact with the boiling water. Add the eggs and then the butter, continuing
stirring with the whisk so that the fondue does not stick to the bottom. The sauce should be smooth and homogeneous. Add salt and pepper to your taste.

Serve the fondue hot by placing it in the center of the table with its pan. You can dip bread, raw vegetables or pieces of meat in it. Your choice!
