150 ml water

Juice of half a lemon (optional, to add freshness

Preparation

Preparation of the syrup:

In a saucepan, dissolve the sugar in the water over medium heat. Stir continuously until the sugar has completely dissolved.

Bring the mixture to the boil and let it boil for 2-3 minutes. Then remove from the heat and allow to cool completely.

Preparation of the mix

Once the syrup is cold, add the Amarone wine and stir. To your taste, you can add lemon juice, it will add a touch of freshness.

Freezing:

Pour the mix into an ice cream machine and start the freezing process according to the instructions in the manual. If you do not have an ice cream machine, you can proceed manually. It will be a long, but addictive process. Pour the mix into a shallow container and place it in the freezer.

Every 30-45 minutes, remember to stir the mixture with a fork to prevent ice crystals from forming. Repeat this process for at least 4-5 hours or until the sorbet reaches a creamy consistency.

Serve:

Serve the Amarone sorbet in small cups or dessert glasses. You can garnish your dessert with a few grapes or a mint leaf. Its intense flavour is perfect at the end of a meal or accompanied by aged Asiago PDO cheese for a gourmet moment.
